Creamy Uni (Sea urchin) Spaghetti



Sea urchin!! I'm sooo loving it! Eating it alone or put it in japanese egg custard or in spaghetti sauce!!! Try this recipe and u will cry for more!!

Ingredient (serve4)
1 stick of butter, diced (keep about 3 tbsp for melted butter)
1 box of sea urchin
Half lemon
Heavy cream
Shrimp soup stock 
White wine
Jalapeno, grated
Tiger prawn 
Parmesan cheese, grated
Bread crumb
Ur preference of pasta, I use normal spaghetti
Scallion 
Sea weed if u like
Salmon roe, sea uchin to garnish

1. In food processor, mix butter and sea urchin and lemon juice and zest, put in small amt of salt. Mix until it well combined.
2. In small bowl, mix togetter bread crumb, parmesan, meted butter until combined. Spread in oven pan n let it bake in the oven until golden brown.
3. Prepare the spaghtti, 
4. Pour soup in to sauce pan bring to boil add white wine, pasta stock, let it reduce, pour in heavy cream, put in the uni butter, gently stir until combine, add in grated jalapeno, season with salt, add tiger prawn just until it cook through then keep it aside, cook until sauce thickened and uni smell soooo tempting!!!
5. Put pasta in the sauce, stir well!
6. Put pasta in plate sprikle the scallion and then the parm crumb, nicely place the prawn on top and place the fresh uni and salmon roe on top of the prawn! 
7. Now u re ready to ENJOY!!! Sooooo good!!

Brownie Cookies!!

It has been a while till this post come out. I have been busy and lazy at the same time, lol. But, believe me this post is worth waiting! I can only say it's splendid!! For those who re like me, the chocolate addict! It's crisp, it's fudgy, it's rich in flavor. The most favorite chocolate recipe for me  at the moment! Haha, I think that some of you might get mouth watering already! Try this recipe and comment "Is it worth the rave!?" 




Tools you will need:

1 large mixing bowl
1 small mixing bowl
1 medium size stainless bowl 
a medium size pot + stove
(or you can just use microwave, it's pretty much the same as I tried)
silicone spatula
electric mixer 
oven mitt
And yes! the oven :)

Ingredients:

450 grams Chocolate (As u prefer, I use very dark chocolate here)
60 grams Unsalted Butter
1/2 cup Cake flour (Use all purpose flour if you have it on hand, just sift it a few time before measure) 
1 tsp Baking powder
1/4 tsp Salt
1 3/4 Granulated white sugar
4 Large eggs at room temperature
1 tbs Vanilla extract
This part of ingredient is up to personal preference, you can use any of your favorite. "Be creative!"
Here re mine:
Marshmallow 
White chocolate chip 
Dark chocolate chip
Cashew Nut (Walnut might be better but it's hard to find here in Bangkok)
I think it should be quite good to put the coconut flake as well, but I did not coz i'm not a really big fan of it. All those combination should not be over than 3 cups 



The finished dough. Ready to bake!

    

Okie! Are you ready? Let's get started!

- I will separate the method into 4 main parts for your ease to manage things
1. Prepare your topping. Roast the nut, chop it as u like. 
2. Mix the flour, baking powder, salt in a bowl ,and set aside.
3. Put water into a pot, bring it to boil on a stove. In stainless bowl, put in chocolate and butter. Put the bowl of chocolate and butter on the pot with boiling water. Let it melt and combine, lastly stir with spatula.
4. In the mean time, beat eggs and sugar in large mixing bowl until it turns pale yellow cream which should drip down slowly as you lift the mixer up. Pour in vanilla extract and blend it. 
- Now that you have 4 parts of ingredient ready, Beat the chocolate mixture into the egg mixture, fold in the flour mixture (be careful not to deflate the batter much), stir in the topping you prepared. 
- The batter would look a bit runny, chill it in the fridge for 30-60 mins. 
- Preheat the oven to 350F or 177C
- Put Parchment paper on oven tray, scoop the dough on, press the top and mold it to the shape, don't forget to allow the 2" space for the cookies to expand. 
- Bake it for 8-10 mins, Never over bake it!
- Put the tray on rack, let it cool and set. And ENJOY!!!
- It tastes best when it freshly set after bake, crispy on the outside and fudgy on the inside. But if you like to keep it, please make sure it's in an airtight container, and if you have some coffee bean, put them in your cookies container.

My first blog post and the making of Chocolate Chip Cookies

It's my first Blog post. Thanks to my dearest friend ohbubububsi for inspiring me.
Well lemme introduce myself a bit, I'm a food obsessor (Big eater, lol) that is why I love to cook and bake and try new things. I'm also a beauty addict and a dog lover! I have been a follower, a subscriber reading watching and studying others for quite sometime, and now that I feel like writing my own blog to share my interest and knowledge and experience and things I like.

Okay! Let's get start! On my passed weekend I got a request from my sister-in-law for a cookies baking time. As we don't have much time and a little bit lazy from a busy week, we decided to do a basic fast and yum soft baked chocolate chip cookies :) But I'm a chocolate lover, so I add extra treat, dark chocolate chunk, on top!






Here are List of tools you will need,
1. Electric Hand Mixer (You can use hand whisk if you got strong arm)
2. Small whisk or fork
3. Small and medium mixing Bowl
4. Small ice cream scooper or a spoon
5. Kitchen mitt
6. Of course an Oven!

Now let's shop for the ingredients. (24 cookies)
1 cup Unsalted Butter *must be at room temperature 
2/4 cup Granulated Sugar 
2/4 cup Light Brown Sugar 
*I don't like it very sweet, you can add more if you prefer. And also you can adjust it according to the chocolate chip and bar you use. If your chocolate is very sweet already, you won't need very sweet dough. Does it make sense? ;)
2 Large Eggs *must be at room temperature
1 1/2 tsp Vanilla extract
3/4 tsp Salt
1 tsp Baking Soda
2 1/4 cup Flour
1/8 tsp Ground Cinnamon (optional) I like a little scent of it when combine with chocolate n vanilla 
2 cups Chocolate chip
Chocolate bar, cut it in small piece as you like



And yeah we are ready!
1. Preheat the Oven to 375f or 190c
2. Mix the flour, salt, baking soda, cinnamon together in small bowl using a small whisk
3. In a medium mixing bowl ( you can use the large bowl ;)) cream up the butter and sugar. Add in the egg one at time and beat until combine and the mixture look nice and creamy. Pour in Vanilla Extract and mix well.
4. Put the flour mixture into the butter mixture. Mix them together just until you don't see any flour left aside. Never over mix the batter  as it can result in a hard baked cookies instead which we don't want that.
5. Put in the chocolate chip. Beat until gradually combine. If you do this on a warm day, chill the dough in the fridge for 15 mins. If the dough is too soft the cookies will spread out too much and come out not as good. 
6. Spread the parchment paper on the tray. Use the small ice cream scooper to scoop out the dough and align them on the paper with 2 inches space between each scoop to allow the spread. 
7. Put piece of chocolate bar on top of each scoop of dough, press a bit. Put the tray in the oven for abt 8-12 mins. Keep looking since 8 mins, if you see it starts to turn golden brown then it's ready!
8. Let them cool completely and ENJOY!!
